Anamaya's Food and Cuisine


Anamaya means health in Sanskrit, and our restaurant is dedicated to creating tasty healthy meals that our genius chefs, staff, and guests dream up. We have a fixed menu offering different breakfasts, lunches & dinners each day. We can accommodate vegetarian, vegan, gluten-free or those who eat fish and/or chicken, but we do not serve red meat.  Almost all of our food is local and organic, with some of it, especially our greens coming directly from our own farm.

Food Preparation

Our restaurant and dining experience is unique and a core part of the Anamaya experience. Our chefs and kitchen staff prepare the food in the prep kitchen and then bring them up to plate them in our main lodge kitchen where guests can watch and learn. Our chefs will teach tricks to anyone who cares to learn, and we have weekly cooking classes too. We take care to prepare vegetarian dishes separate from fish or chicken dishes to respect vegetarian ideals. An Organic Dream

We are dedicated to using organic produce whenever possible and are constantly seeking out new sources of organic foods in Costa Rica. Some are grown locally and some are brought from other parts of Costa Rica, especially the higher altitudes where foods will grow organically that can’t survive the beach climate. In addition, we’re working on importing some organic dry goods and spices that are unavailable here. We grow as much of our produce as possible on our farm, Rancho Delicioso.

Local Color and Spice

Our fish are caught in the clean waters in front Anamaya. Our chicken is local, as are the organic eggs, many of which come from our farm. We grow some of our herbs on site, as well as a few veggies. We’re also supporting other local organic farms. Over time, we hope to be able to grow most of what we’re eating on our own farm just five-minutes down the road from Anamaya.

Superfoods For a Super Life

All our meals are stocked with “superfoods” that are known to be the Olympic athletes of the vegetable world for their abundance of vitamins, minerals, and phyto chemicals, and other forms of nutrition. Broccoli, spinach, sweet potatoes, and avocados are just a few of the core ingredients that we consider vital to a healthy diet.


Is Anamaya vegetarian or vegan? Although we have these elements in our cooking and can cater to those who are strict vegetarians or vegans, we’re more focused on what we do eat rather than what we don’t. Vegaquarian is vegetarian + seafood and is more commonly known as “Pescatarian”, although we’re not super strict about this either. The core of the Anamaya diet is lots of raw food, plenty of protein and healthy fats, minimal processing, lots of fruit, veggies (especially greens), whole grains, minimal dairy and meat, and NO junk. We also use no white sugar EVER and are 100% gluten-free.

Whether you consider yourself pescatarian, vegetarian, vegan, or otherwise we support the paths of all our guests in their quest to achieve optimal health.
